Peppermint Brownies! Yum!

Ooh La La! Who knew that peppermint brownies would be so good. I'm a huge brownie fan, so I was pretty doubtful that anything could make them better, other than more chocolate or caramel. Just one drop of peppermint essential oil and these taste so heavenly.

This recipe has no artificial flavors, colors, or synthetic fillers, this is all natural, and super yummy.  I used the dark chocolate chips from Sprouts with 68% Cacoa and it made a huge difference in taste. I received rave reviews from my party.


1/2 cup minus 1 Tbs. coconut flour ( coconut flour)
1/2 cup dark chocolate chips (Enjoy Life chips)
1/2 cup plus 2 Tbs. butter, melted
3 eggs, at room temperature
1 tsp. vanilla extract, optional


Preheat oven to 300 degrees. Grease a glass baking dish (8x8 or 9x9).
Mix together all ingredients. Pour into the baking dish and bake for 30-35 minutes, until a toothpick inserted into the center comes out clean. Cool for 30 minutes before cutting or removing from the pan. These store well at room temperature or in the fridge for a few days. Make sure you keep them in an airtight container.
